Egg Bhurji with ridge gourd( Beerakaya)

My grandmother used to prepare this dish .it's very good taste .you can eat this with chapathi , rice and also you can eat this directly .
  Ingredients :
  • 1 beerakaya (washed but without peeled)
  • 3 eggs 
  • 1 big chopped onion
  • 2 or 3 chopped green chillies
  • curry leaves 
  • 1ts mixed (cumin seeds,mustard seeds,urad dal)
  • 1ts ginger garlic paste 
  • 1/4ts turmeric powder
  • 2 ts red chilli powder (depends on your taste )
  • 1ts coriander powder
  • 1/2ts garam masala
  • coriander leaves to garnish
  • salt to taste
  • 3 or 4 ts oil
  Preparation :
  • choppe the beera kaya finely or you can use blender which is have chop option .
  • for this preparation you need kadai .heat the oil in the kadai .add the mixed cumin seeds,mustard seeds,urad dal when they splutter add chopped green chilies, onions and curry leaves. fry them little .ofter that add ginger garlic paste ,turmeric powder  and blend them well .
  •  add finely chopped beerakaya mix all together when they cooked add red chilli powder,coriander powder and salt to taste.
  •  add raw eggs when you see the oil on top of the dish .put the lid for 1min 
  • when the egg is still raw mix it well until they split like small pieces .
  • finally add garam masala and chopped coriander leaves .
    now it's ready to eat :)

Cauliflower Manchuria

Ingredients: 
  • 1 cup cauliflower florets
  • 1/2 cup all purpose flour
  • 2tbsp corn flour
  • oil for deep fry
  • 1ts red chilli powder
  • salt to taste
for gravy :
  • 2ts tomato sauce
  • 2ts soy sauce
  • chopped ginger and garlic 
  • 1/2 chopped onion 
  • some curry leaves
  • salt
  • 1 or 2 chopped green chillies
  processing:
  • 1.heat the oil for deep fry 
  • mix all ingredients those are all purpose flour,corn flour,red chilli powder and salt . add some water to make a thick soft liquid paste.
  • dip cauliflower florets in to above paste and deep fry them until they get crisp and golden brown color and then drain it .
  • for gravy,heat a pan add 3 ts oil ,add green chillies,curry leaves , onion and chopped ginger and garlic fry them little bit .
  • ofter that add tomato sauce,soy sauce and salt to taste  and fry them all 
  • finally add fried cauliflower florets in to the gravy and mix then well .
  • eat when there a heat with lime :) enjoy

Mutton Curry

  •  1/2 kg Mutton 
  • 2 Green Chillies
  • 3ts Ginger Garlic paste 
  • 2 medium copped onions 
  • 2 Cloves 
  • 1 Cinnamon stick big
  • 2 Cardamom 
  • 2 ts Red chilli powder 
  • 1/2ts turmeric powder
  • 2 ts Coriander powder
  • 1/2ts garam masala
  • Coriander leaves 
  • Salt  to taste
  • 5ts Oil
  • 1 or 2glass water
  •  
     Preparation:
    1. clean the mutton and maginate 1hour with all spices (1ts red chilli powder,1 ts coriander powder ,1/4 ts garam masala,2ts ginger garlic paste ,pinch of salt and oil. )
    2.take the oil in the pressure cooker then add Cinnamon stick,clove ,cardamom ,chopped green chillies and onions. cook it until onions get golden brown color . 
    3 . ofter that add turmeric powder and ginger garlic paste .
    4 . then add marinated mutton and mix it well . cook it 5 min without lid so that it will fry in the oil little bit.
    5. add water .check the  taste add remaining spices .(it depends on your taste )if u want more spice u can add  now . put the pressure cooker lib .cook it for 3 whistles. turn off the stove and  let it cool down .
    6.open the lid . then cook it until that liquid get slight  thick. finally add coriander leaves and garam masala.
    eat with hot rice or chapati.

      Banana Pakora



      Banana Pakora or Banana Pakodi


      • 2 Green Bananas 
      • 1 cup Besan flour
      • 2cup Oil (for deep fry)
      • 1/2ts Red Chilly Powder
      • pinch of Baking Soda
      • 1/2 ts Coriander Powder
      • Salt
      • Wate

      • First slice the bananas into round shape or which shape you like .
      • take a bowl  add the besan flour,salt, red chilly powder,coriander powder and baking soda .
      • mix all together .
      • add some water to make a paste(if u dip a spoon into that paste it will coat like apple with chocolate) .
      • taste the paste if you want to add some salt or spicy just add now otherwise no need to
      • add the banana slices in to the above paste .
      • heat the oil in the frying pan and deep fry the banana slices until it will get golden brown color.
      • take off the banana slice form oil and garnish with ounces and lime .
      • eat when they are hot .

      Pumpkin Curry with Brinjal

      My mom makes this dish with pumpkin,brinjal, better melon, indian beans etc.this is also called kalegura, it means mixed vegetable curry .it tastes like carrot curry .but when we use some better melon,brinjal  to make this dish it will taste different .it is good for health .  today i am using  pumpkin and brinjal only .

      Ingredients for this dish
      •  pumpkin(cut pieces)
      • Brinjal(pieces)
      • curry leaves 
      • green chillies
      • 1 medium onions
      • 1/2 ts ginger garlic paste 
      • turmeric powder
      • 1/2ts coriander powder
      • red chili powder
      • garam masala (optinal)
      • coriander leaves 
      • salt (as u r taste)
      • 1/2 ts cumin seeds
      • 1/2 ts urad dal
      • 1/2ts mustard seeds
      take 3 or 4 ts of oil in the pan . add mustard seeds,cumin seeds,urad dal when they splitter, add green chillies ,onions and curry leaves when they get slight brown add ginger garlic paste and turmeric powder ofter that add bringal pieces and sprinkle little bit of salt and finally add cut pieces of pumpkin .just cook it  5 min with out lid . pumpkin is cook easily so no need to cover it . add coriander powder ,chilli powder and mix it well . you can see that bringal and pumpkin get cooked at right consistency then add garam masala and coriander leaves. check the taste . ready to serve  with rice or chepathi .

      Ginger Pickle

      Hi friends,
                     I want to share my dishes to you all so started this blog .this is my first dish .i think,this is very useful for people who don't know  how to make ginger pickle.
                Ginger Pickle .....you can eat this with Dosa,Idle,Rice and whatever you like .ok then lets start ......

         For this preparation you need--
      • 1cup Ginger
      • 1cup Tamarind
      • 1cup Jaggery
      • 1cup Red Chilli Powder
      • 1/2cup Garlic Cloves
      •  3/4cup Salt
      • 1ts Coriander Powder
      • 1/2ts Fenugreek Powder
      • 1/2cup Oil
      • 3 or 4 Red Chillis
      • 1ts Mustard Seeds
      • 1ts Cumin Seeds
      • 1ts Urad Dal
      •  2 Garlic cloves (cut them in to small pieces) 
      •  some Carry Leaves
      • 1/4ts Turmeric Powder
                In the pan take 2 spoons of oil and fry the ginger pieces until they are light brown color. In the same pan take the tamarind ,put some water in it and cook it for 5min keep it a side for cool down to room temperature .

                Grind all ingredients together (those are fried ginger pieces ,cooked tamarind, jaggery, red chilli powder,garlic cloves,salt,coriander powder,fenugreek Powder) to a fine paste.

                Final step tampering .Take a pan put some oil and heat it then add red chills,mustard seeds ,cumin seeds, urad dal and garlic pieces then turn off the heat after that add curry leaves and turmeric powder.cool it down to room temperature .finally add earlier prepared paste to this tampering . now ginger pickle is ready ....
